Our Strawberry Butterfly Scones with Bear Nibbles Strawberry Yo-Yos

A little while ago, the lovely people at Bear Nibbles sent us through an email that said : "Hope you’re well. I’ve come across your blog and thought this might be of interest ! We do the PR for BEAR nibbles which are 100% natural made from fruits and granola. I’ve attached a release with a little more background information on BEAR and their products. We’ve got some great recipes that we thought you could perhaps try out? One of our favourites is the Strawberry Heart Scones which I’ve attached the recipe for. If this is something you’d be interested in, I can send you the Strawberry Yo-Yos which are used in the recipe." Well, what kind of a question is that ?! We love cooking here at The Madhouse so that's a resounding yes !

The girls excitedly helped me start to get the ingredients together, intrigued by what we'd find in the bright pink packets. One very slight criticism - the packets are really hard to open. I had a struggle so I can imagine how hard it would be for kids to open them if you put them in their lunchbox, which is a real shame.

Nothing a pair of scissors couldn't deal with though ! Ta-da ! Swirly whirly Catherine Wheeles or Yo-yos that remind me of the long coils of chewing you can buy, except much healthier. We had a sneaky nibble before chopping them up for the scones and unanimously said they taste of strawberry jam. Yum !

So, the special recipe we used is :

BEAR’s Recipe for Sugrrrfree Strawberry Heart Scones

(This is what they're supposed to look like, so you can compare with the way ours came out !)

Ingredients:

250 (9oz) self raising flour
Two tbsp honey
100g (3.5oz) sultanas
60g (2oz) butter
4 yo yos chopped into small pieces
Pinch of salt
200ml milk

Method:

Preheat your oven to 180 deg C/350 deg F/gas mark four. Place your flour; sweetener and salt in a bowl then rub in your butter. Stir in your milk and add your sultanas. Make into a ball of dough. Grease a baking sheet. Lightly flour a surface then roll out your dough to about three-quarters of an inch thick. With a heart scone cutter of the desired size cut out heart shapes. Place on the sheet and brush with a little milk. Bake for up to 20 minutes until golden brown.

Umm just one problem - there's no mention of the yo-yo's in the method ! We chopped ours up and added them with the sultanas. I was impressed at the small amount of butter, the sugar-free recipe and the inclusion of lots of healthy milk. It's a great recipe for kids.

We used a butterfly-shaped cutter instead of a heart one. The dough was very sticky and gooey so don't hesitate to throw a good handful of flour over the mixture from time to time to keep it workable.

20 minutes later - just time to clear up the kitchen and do the washing up ! - and they looked like this.

Big smiles all round - even from the girls' friends who supposedly don't like fruit, fresh or dried !

As they're scones, I said they could add butter, jam or honey if they wanted but the girls loved them as they were, which is even better for them. They were absolutely delicious warm from the oven and weren't too crumbly which is often a problem with scones.

We'll be back with another review of the other Bear Nibbles that we were sent so watch this space - we'll be finishing off our butterfly scones first though !

  1. They sound yummy. I've found a few recipes of late that don't mention what to do with one of the ingredients. I made cheese & apple scones recently which listed mustard powder in the ingredients & then missed it in the method. Luckily I didn't have any in the house (who does?), and they tasted just fine without. But I think these sound better with the yo-yos.
